When the enemy is in sight, keep your naval cucumber on the bridge and give your orders from there; don't time compress; decide on a plan of action and prepare your weapons; consider what the enemy ships might do and what your response should be.
Remember your sub's capabilities. You can't stern chase warships, you haven't got the speed.
It's a great commentary on the game that real life skills will get you success, but there are no guarantees either. You may be unlucky one day.

If your going to shoot at a target(especially a warship) moving right at you set the torpedo to fast, it's on the top left of the panel you open up where you set depth and lower your periscope down(after you shot) and remain your same course. The Torpedo from my personal experience should destroy it with 1 shot and it won't change course because it last spotted you dead ahead.... of-course I could be wrong but I just succeed in it an hour ago.

You shouldn't fire the torps at a target that's headed straight at you, you're giving yourself a narrow target =p
its usually a good idea to read on forums or even search youtube videos on how to play the game...

@DVAFP I did.. and I did :-).. and I simply forgot to set the depth right on my torps.. but yes, good advice to anyone playing this game.
