Just open up the plane to its max and let the computers figure out what to do

I saw another interview of the same incident. He said they figured the speed increase turned the remaining plane into a rocket allowing him to take control. That was just what he said, who knows really.

I bet an A-10 could sustain similar damage and make it, but there aren't many planes capable of flying in that condition, that's for sure.
Answer: Excellent engineering & software programming. Since the fuselage is relatively flat, it probably also acts like a wing itself. These jets are fly by wire and not stick and rudder. If you notice, at 4:26, the right engine nozzle, on the same side as the torn-off wing, is much more open than the left engine nozzle. The flight computer must have compensated for the loss of lift on the right by increasing the thrust on the right & adjusting the remaining flight surfaces.
