材料:吉利丁片15g、無糖動物性鮮奶油500g、Marscarpone Cheese500g、蛋黃51g、細砂糖57g、水51g、濃縮咖啡液100g、手指餅乾、咖啡酒30g、可可粉

作法:取出冷藏後無糖動物性鮮奶油用攪拌機打發約6分發有點濃稠狀,再把吉利丁片放入食用冰開水中泡至軟化,再來瀝乾吉利丁之後用隔水加熱來溶化吉利丁,大約60-65度­度溶化即可。
準備鍋子把水、細砂糖倒入煮到滾,這時準備調理盆倒入蛋黃用攪拌機打勻至乳白色,把煮滾的糖水慢慢倒入盆中攪拌到濃稠狀無泡泡即可,再把Marscarpone Cheese倒入盆中用攪拌機慢速攪拌均勻即可,注意不要攪拌太久會讓Marscarpone Cheese分離。
把煮溶化的吉利丁倒入攪拌一下後再倒入之前的鮮奶油中拌勻。
濃縮咖啡液、咖啡酒一起混和,準備烤模杯子倒入1/3鮮奶油,用夾子夾取手指餅乾泡一下咖啡酒糖液再放入杯中,再用鮮奶油把杯子填滿放入冷藏中30分鐘,取出後發現鮮奶油­不晃動即完成,最後灑上適量的可可粉,這樣就完成提拉米酥。
