Chocolate chip muffins
Ingredients
MAKES 12
3 tbsp soft margarine
200 g/7 oz caster sugar
2 large eggs
150 ml/5 fl oz whole natural yogurt
5 tbsp milk
300 g/10 12 oz plain flour
1 tsp bicarbonate of soda
115 g/4 oz plain chocolate chips
Method
1 Line 12-cup muffin pan with muffin cases.
2 Place the margarine and sugar in a mixing bowl and beat with a wooden spoon until light and fluffy. Beat in the eggs, yogurt and milk until combined.
3 Sift the flour and bicarbonate of soda into the mixture. Stir until just blended.
4 Stir in the chocolate chips, then divide the mixture evenly between the paper cases and bake in a preheated oven, 200°C/400°F, for 25 minutes or until risen and golden. Remove the muffins or until risen and golden. Remove the muffins from the oven and cool in the pan for 5 minutes, then place them on a wire rack to cool completely.

I made these cupcakes just today and they turned out great!!! they were so light and fluffy, is that from the natural yogurt??
