lava reef is pretty easy. try to get sonic quickly to the treadmill thing (down the shaft) with 50 rings and switch to kuckles there. then finish off as knuckles. i got a D tho.
For carnival night, i got 50 rings as soon as i could and switched. as the hint says, best time to switch is if you're starting to move left or you're at a little bit that takes ages to do.
