I'm so thankful for Ms. Waters for a return to sensibility in food production and consumption. I was just thinking of an idea to do such a garden in my child's school, this piece gave me all the inspiration and encouragement that I need!

The peculiar evil is this: that the less money you have, the less inclined you feel to spend it on wholesome food. When you are unemployed, which is to say when you are underfed, harassed, bored, and miserable, you don’t want to eat dull wholesome food. You want something a little bit “tasty.” There is always some cheaply pleasant thing to tempt you. Let’s have a three pennorth of chips! Run out and buy us a 2-penny ice cream! Put the kettle on and we’ll all have a nice cup of tea." -- G. Orwell

Hopefully one day soon..good "affordable" produce and ingredients will be available to all including the poor..and then we can be inspired to eat good healthy food then the quick option of buying fast food because it's cheap and easy.

"How many stressed-out working mothers have time for THIS is the morning?"
5-10 minutes to make a salad. Wow!
If I can do it, any mother could do it. It's not hard. And cooking relieves stress if you're doing it at home. In the morning. before your kids are up. Why do the voiceovers constantly make biased, erroneous comments? Or, right... to make us doubtful about the integrity of cook.

I really do appreciate how she is trying to help everyone eat healthy, because our obesity rate in the U.S. is really high. I try to eat healthier foods, but sometimes people cannot afford it.

I'm curious as to why Ms. Stahl thinks having fresh food is a luxury and for the wealthy. There are so many means to grow fresh fruit/veggies/herbs regardless of where you live or how you live. Alice makes a wonderful point that many people prefer the luxury of new shoes or 'stuff' whereas others prefer the luxury of fresh foods (simpler means). Ms. Waters is iconic and inspirational.
