Yup. Hold the start button for around 5 seconds. U can do blind attack for ALL kinds of races.

You need to choose racing-engine when you are asked to select the level-7 engine. Once you select, you can't change!!! So, make sure that you choose the correct engine. By the way, having a racing engine doesn't give you a big disadvantage. Even my full-tune AE85 can beat Takumi in Tsukuba...

Takumi starts to use drain in the beginning of the race if you notice it:P He uses almost very drain or gitter in fact!!!
