Ingredients:
15 Chicken tenderloins, pounded thin and dredged in flour and salt
4 med size Roma tomatoes and approx 8 oz sliced fresh mozzarella
i cup White wine
4 tbsp butter
salt and pepper to taste

Directions:
Place pounded and floured chicken in to a med high heated pan with 2 tbsp of melted butter
Cook the chicken on both sides until it is cooked through (approx 3 minutes on each side)
Cook chicken in batches and when each batch is done place them on a paper towel lined plate
When all batches are cooked. replace the chicken in the pan with 2 additional Tbsp of melted butter
Add white wine and cover
Remove cover and add the tomatoes topped with the mozzarella that has been salted and peppered to taste
Return cover to pan and heat on low until all the mozzarella is melted
Serve immediately on a platter and...ENJOY!!!!
