Beef jerky made with hamburger is better than with steak for two reasons: its much less expensive and its much more tender. You can shape the patties with your hands but I have found that putting a 1/4 cup of hamburger in a bowl and placing an identical bowl on the first one I can smush the meat into a perfect patty. The patties must be of uniform size or they won't all be finished at the same time, which isn't such a bad thing, just sayin'.
