here is the recipe.

2 tablespoons olive oil
1 onion, chopped
2 carrots, peeled, thinly sliced
1 red bell pepper, seeded, chopped
3 large jalapeño chilies, seeded, minced (about 4 1/2 tablespoons)
1 28-ounce can crushed tomatoes with added puree
3 cups water
2 15-ounce cans black beans, rinsed, drained
2 15-ounce cans kidney beans, rinsed, drained
5 garlic cloves, minced
2 tablespoons chili powder
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1/2 teaspoon ground cinnamon

Directions:
Heat 2 tablespoons olive oil in heavy large pot over medium-high heat. Add onion, carrots, red bell pepper, and jalapeños and sauté until onion and carrots are almost tender, about 8 minutes. Add tomatoes, 3 cups water, beans, white wine vinegar, garlic, and spices. Bring to boil. Reduce heat to medium-high and cook, uncovered, until mixture thickens, stirring often, about 20 minutes. Ladle chili into bowls and serve.

  • Question: is there a difference in the taste between adding the spices earlier (adding them before you add veggies) and adding the spices when you add them (after you added the other ingredients?)

I ask because I'm Indian and have this perennial debate going with my mom about the best time to add spices to our food - I like to add them earlier and later, she complains adding them later makes you taste raw spice in the food.

I'd love your thoughts on this matter, thanks.

  • @ilurvemv She's right. Two things dry spices do.

    1. they soften

    2. then they release their flavor.

If you put them in at the end, you take the chance of those two things not happening.

  • @jakatak69 Hey Jack, I have been watching your shows quiet often now, and i love your silverware set..... where did you get them? Can i buy some from you? Thanks -Matt

  • @mustard102 I received them as a gift for my wedding from Kathy Ireland. I am not sure where she got them. Print out a pic of the set from my vid and bring to Macy's or crate and barrel or some other store to help identify it.

  • I JUST bought the ingrediants to make this... i am sooo excited lol.... One question. I dont like Carrots so i plan to use potatoes. Should i add more water because of that?

  • @atltallone907 not sure. If you feel you need to then make sure you simmer out any extra water to keep it thick.

  • @Swordth you may also be allergic to the oil in the skin of the Jalapeno . I had no issues. You are right to use gloves so this doesn't happen again. Nice comment. thanks for the warning.

  • A tip to anyone as dumb as me: Use some gloves or something when cutting the Jalapenos. And try not to touch your eyes while your doing it.

I burnt the hell out of my eye, and my fingers are stinging unmercifully right now. It feels like someone is pouring boiling water over my hands.
