Dustin, Patrick and I make our own version of Dippin' Dots (the ice cream "of the future" made of tiny spheres you get at theme parks) out of Hagen Dagz (superior ingredients IMO) and liquid nitrogen! Hopefully you can recreate and get better results.

You need:
Liquid Nitrogen
Ice cream of your choice (no chunks, no chips, and as creamy as possible), melted into liquid.
A strainer
Dry Ice in a bowl, with another bowl on top of that
A double layer of small containers that fit into each other.

Directions:

Pour the liquid nitrogen into the double layered container
Pour the ice cream through the strainer slowly into the liquid N02 so that you get drops, while stirring rapidly (to avoid clumps and get the spheres)
Remove the drops of ice cream time to time and place them into the double-layered dry ice bowl (without the dry ice they will melt very quickly).
Make as much as you wish...then eat! Enjoy.
