As someone who works with vets and rabbits, any vet will tell you that the rate her nose is moving and how wide her eyes get, Rosie is experiencing stress. Most rabbits do not enjoy water. What looks like "relaxing" in the water is their instinct to stay still in order to keep their mouths above water.
Glad you didn't keep her in their long; also, you should make sure you wash her off well so no chemicals such as chlorine remain on her fur before she grooms herself.
