Recipe used from "By Any Greens Necessary" written by Tracey McQuirter
Here is the recipe below:
4 Tablespoons of extra virgin olive oil (evoo)
1 medium onion, chopped
5 or 6 cloves garlic, peeled, and chopped
1 pound button mushrooms, chopped
1 pound extra-firm tofu
1 cup kalamata olives, pitted and chopped
3 tablespoons Bragg Liquid Aminos
2 tablespoons nutritional yeast
1/2 teaspoons dried oregano
Cayenne pepper, to taste
One 1-pound package brown race lasagna noodles
One 16-ounce jar of your favorite vegan tomato-based pasta
1 bunch fresh spinach, chopped
1 cup fresh basil leaves, torn
Preheat oven to 350 degrees F
Heat 1 tablespoon evoo in a skillet. Add onion, garlic, mushrooms and saute until soft. Drain.
Squeeze the excess water out of the tofu by pressing it in a towel. In a large bowl, crumble the tofu with a fork and stir in the sauteed vegetables, olives, liquid aminos, nutritional yeast, oregano, cayenne, and 2 tablespoons of the remaining evoo. Adjust seasonings to make this as spicy as you can. Set aside to marinate.
In the meantime, cook the lasagna noodles according to the package instructions.
Spread the remaining 1 tablespoon of evoo over the bottom of a large casserole dish, then cover the oil with a layer of tomato sauce. Place a layer of lasagna noodles on top of the sauce. Spread half the tofu mixture over the noodles. Next, add a layer of spinach to cover the tofu mixture, then add half the basil leaves on top of the spinach. Add another layer of noodles, then layer with the sauce, then the remaining tofu mixture, then spinach, then basil leaves. Cover with a final layer of noodles and sauce. Bake for 45 minutes.
Makes 8 to 10 servings.
Vegans can still have cheese...it's just a little hard to find at first because u need a dairy free cheese. Trader Joes! ....and thank you for this exciting recipe. I can't wait to try it!

@honorbethnaked Yeah, I know. There are some brands on the market. I hear that Daiya is pretty good. I'm not sure I spelled it correctly. I hope you enjoy it. Thanks for chiming in!

Question.. you said your husband eats meat, so how does that work when it's time for diner? Do you cook a separate meal for him and one for you?
and another question.. Vegans eat a lot of beans as part of their diet but i find that beans make people fart a lot ?! how do vegans deal with that!? :S

@virgo29virgo I don't cook meat at all. If he wants something, he picks it up from somewhere else. I use to cook the meat, but we had a heart to heart talk and we have an great understanding. I don't have issues with flatulence (farting) when it comes to beans. If I cook dry beans I soak them over night and when I have beans from a can I rinse them well. It is good to take a digestive enzyme too. Its should help with the excess gas.

I'm slowly trying to work my way into becoming vegan/vegetarian.. Not sure.. It's a new idea.. I'm just disgusted with meat and I want to live a healthier lifestyle.. I've been looking at a few videos and it seems that being Vegan is not boring at all! .. but I think the hardest thing to give up (personally) would be Cheese! Only recently I realized how much cheese I eat!

@virgo29virgo Cheese is very hard for some to give up. It wasn't for me, because I never was one who really liked cheese. Dr. Neal Barnard has a book that you should consider reading. The name of the book is Breaking the Food Seduction.
