1 splash of water on chocolate is enough to turn it lumpy and burnt, keep water away, your best of in putting chocolate into the microwave with a plastic container so the heat transfers but not as fast as metal. im the mother of chocolate i make it, melt it, crumble it and eat it =)

I would just put the pan with the chocolate over the hob for a few minutes (w/o the chocolate of course) and then put the chocolate in and then put it over the pan. Water and chocolate doesn't mix.

@CathhStar any type of cream but usually double cream...or whatever you find in the grocery store which says.. ultra-super dooper creamy!
