It's a more fleshed out version of the in-game song. Live instruments, sometimes live vocals, and the music is given a more robust treatment from the ground up. It's basically what companies like Square-Enix does with their Final Fantasy soundtracks (piano collections, orchestrated arrangements). SNK's great at rocking it out or jazzing it up with their music - pretty much a favorite of mine. Their Last Blade 1 & 2 arranged albums are awesome.
