Next were going to be making a greek tofu salad. So were going to start with the cubed tofu. Now Ive cubed a third of a block of tofu and Ive actually heated it in the microwave. Ok so were going to put that in here. And were going to combine everything. So weve got the red wine vinegar, the olive oil, the red onion, so lots of healthy things in here. Lots of great flavors. The tomato, the cucumber, the olives and then the spices. The oregano, the basil, the salt and the pepper. Alright so what were going to do is were going to mix this around. And Im going to show you that you can either eat this salad as is or what were going to do is were going to serve it over a bed of baby spinach, which is great. And the dressing is already in here because youve got the red wine vinegar and youve got all those spices and the olive oil. So see all those colors stirred up in there, looks great. So what were going to do is serve that here. And all of this here is 2 servings so you can have this be 2 servings but total its about less than 300 calories for this whole amount. So if youre going to eat it just yourself thatd be fine too. But you can also divide it into 2 servings which would be 145 calories and 11 g of fat. And again, youre getting that healthy fat in there with the olives and the healthy fat from the tofu and that olive oil.
