We do the same thing at the restaurant I work at, except we only use red peppers, but I like the look of the multicolor...I wonder if it'd be possible to do that with long strips of lemon zest? It'd be kind of a unique way to garnish fish dishes instead of the plain old lemon wedge or slice twist... I think I might try that sometime!
