Life on Earth has been evolving for over 4 billion (4,000,000,000) years now. Consider the time between Jesus' life and the present, just a mere 2,000. That's 2 million times shorter, and even that is an impossible length of time to comprehend, as we humans live for a mere ~80 years or so.

A scientific theory is not a shot in the dark or a guess. The colloquial definition of theory is very different than the scientific definition. Other things that are "theories" include gravity, and the shape of the Earth. In fact, we understand evolution a lot better than we understand gravity.
Furthermore, the universe is extremely vast and complex. Our one planet represents not even a speck of dust in the cosmic ocean. To believe that we were divinely created is narcissistic.

If god created the universe then god and the universe are both separate and therefore finite - if god is finite why call it god?

The problem is that you're probably talking to someone who HASN'T done the research. I could look up these theories if you're interested.

It's easy to look at evolution and say "this couldn't possibly happen", because the differences between different organisms seem so pronounced. A common question is "how could one become the other?" This is a misunderstanding of how evolution works. Organisms that exist today did not evolve from each other, but from a common ancestor with traits of both species, over the course of millions of years.
Many people have difficult grasping time on such an enormous scale.

Life came to arise on Earth via abiogenesis, through which complex organic molecules such as amino acids were formed through chemical reactions in Earth's primitive atmosphere. The earliest forms of life were very simple, but were able to split and replicate themselves, as bacteria.
As they split and replicated, they made small errors. The process is not perfect. These errors accumulated and gave rise to new forms of life, millions of different and unique life forms.
