I live in Beijing. I've heard from locals that the super cheap noodle vendors offering beef often substitute 'dog' instead. Also, a friend of mine saved a dog from such fate from a stand itself. Some Chinese say it's only Korean-Chinese who have a taste for dog, especially in winter when it's said to increase energy and heat. Others say it's the Southern Chinese. The truth is uglier, in that if money can be made anything will be sold for a buck, and that includes food consumption products...

The dog's key role in feeding people for less. 50 cents for a bowl of "beef" noodles on the corner street vendors should NOT be overlooked.
