I think the jumpiness in the end product is intentional - they wanted to make sure that people got the impression that it was shot with home video equipment, even though it is not made explicit.

the people were probably cut out using a combination of keying (didn't see any green screen, maybe they used a luma key) and roto.

Wow, good job guys! This is a pretty cool way of recreating bullet time.
I know you are probably done with tinkering, but the biggest thing I can see is on the commecial you can see a jump in frame a bit because of the cameras being placed too far apart for it to be smooth.
