Cook faster and get that yummy char on all sides...no slimy centers! L-O-V-E them. just had some this past week visiting some friends in Dallas. They got them from a Mexican Meat Market. They had a red rub on them...lots of salt. Trying to find them here in Cali. Called our local ranch meat market in the sticks....waiting to see if he'll find them with his wholesalers....gettin a case if he does!!!

What is different about a split leg quarter from a regular leg quarter?

@ultramegabob2 The are sawed in half to make 2 thinner peices and they cook faster....
