  • I lived in South America with a Peruvian- I have done my research and know how to cook the dish authentically. I didn't substitute ingredients, only added cream cheese to make it extra rich and creamy, I did clarify that this is my version of Aji de Gallina with a unique twist.

  • you can't use substitute ingredients and still call it by its original name...this is definitely your version of a Peruvian Aji de Gallina...try doing some research on this dish

  • If you boil the chicken and the potatoes in wine, it comes out even more delicious, believe it or not!!
