  • I had avoided using dried beans because I believed that the cost savings over buying canned literally went up in smoke (or steam) because of the long cooking time required. Now that my husband is out of work, I was looking at dried beans again and considered a pressure cooker. But, since I believe it is not healthy to cook in aluminum, I would have had to spend nearly $100 for a stainless one large enough to cook for our family with 4 teenagers .   • If you have the cash, you can buy a thermal pot which works on the same principle. Probably costs about $80-100 and you can leave it overnight to cook after boiling.

  • Thank you for your comment. You are right. I have seen those mentioned and looked at them on Amazon. What we have re-discovered, though, is that you don't need to spend that money for another appliance. You can boil food and then leave it in the well constructed cook box to cook overnight plus you can choose any size you want for the same price because you are making it yourself. After all, the idea for thermal pots came from time honored cook boxes! Leslie

  • I would think if it was pressurized, it would reduce cooking time using the hot box method.
