If Israel declares war on Turkey, then Turkey as a NATO member can call on the rest of NATO to defend Turkey and declare war on Israel! In any case Gaza is not part of Israel so it wouldn't be in its own waters! In case you forget IsraHell lost to Hezbollah in 2006 it tried to invade and occupy Lebanon for the 6th time but was repelled by a few hundred fighters who ambushed and destroyed advancing tanks.
@petersz98 That presumes that Turkey will throw it's entire navy into a single engagement. They'll also be on the end of a supply line in foreign waters, Israel will be fighting on it's own waters within easy range of land-based air support.
