You could be right about that! ;) He got it. (Actually, he only gets it when he reminds me, but then I don't say "Fine, but it's coming out of YOUR ALLOWANCE!" at every turn, either. I think he actually comes out ahead by NOT collecting.) He does enjoy the ratings and (nice) comments, though.

Hi. The stomach consists of four compartments - rumen, reticulum, omasum and abomasum. The honey-combed compartment is the reticulum.
The more commoner part that the European would eat is the reticulum. The Chinese would eat a different part probably the omasum but the omasum has plain upright folds from the wall whereas the Chinese dim sum tripe that I had has upright Christmas tree-like folds which are crunchy after cooking.

@zapbuddha I wish I could give this 10 thumbs' up. That is very useful (well, it would be, if I ever worked up the nerve again to try a different form of tripe) and quite fascinating info. (I can't believe that I didn't do more research - as a writer, I'm ashamed of myself. As one who pretty much wrote off ever cooking tripe again - well, that's my excuse!) Thank you!!
