he boils the water first, screws on the top, then only turns the heat on at a lower temperature to finish it off, which I think is important... Thanks for this. I was wondering how to keep from burning the coffee. I've been starting with hot tap water, but it's not really hot enough yet...

Isn't it potentially dangerous to boil the water first? since you're instantly adding pressure while tightening it rather than securing it prior to boiling? just curious.

I don't get the H20 hot enough to cause the kind of pressure to really be "dangerous". The idea here is to get the coffee to brew quickly under a minute. If you slowly heat the coffee it will burn not brew. YUCK . This method has worked great for me for the last 10 years I have years of barista experience and I haven't found a better way of making stove top pressure brewed coffee.
