iPad 3G Setup

I had a USB cable plugged in to my MacBook Pro, and then took the other end and connected it to the new iPad. That really was all I had to do. The device booted up and connected me to iTunes. can i just ask, say you fill up your ipad with your music, films etc. and you have too much stuff to fit it all on, can you change what is on your ipad. so have for example the film narnia on it, but you decide you want hot tub time machine, can you swap them over and only have one of them on there?
