  • @Shamrockbrew I never used to rehydrate yeast, then a winemaker I know filled me in on the use of dry yeast, I now rehydrate in boiled water at 30 degrees centigrade for 15 minutes and then pitch. If you don't rehydrate, you end up killing a lot of the yeast cells.

    How did you pitch your yeast, rehydrate or just throw it in dry?
