  • The garlic, thyme and olive oil she uses to marinate this steak is totally unnecessary. A ribeye steak has enough flavor that all you really need to do is season it on both sides with salt and pepper. Also, I wouldn't cook a thick steak like that all the way on the grill. I'd use the method recommended by the folks from America's Test Kitchen.  It involves starting the steak in a 275-degree oven for at least 30 minutes, and then finishing it up on the grill.
