Tamar interviews Hector Marroquin of Napa Valley Chef Catering Co. (http://www.napavalleychefcatering.com/ ). Chef Marroquin added kimchi and kalbi (with a twist) to his 2009 menu at the St. Helena's Farmer's Market in St. Helena, Calif., the heart of Napa Valley. The nearby Culinary Institute of America has taken notice of his innovation and introduced pupusas to their menu as well. Can kimchi be the next CIA star?

    I thought kimchi was only pickled cabbage.

  • Koreans make kimchi with cabbage, daikon, turnips, cucumbers. They have over 200 regional versions.

  • Looking back at that comment, you've been doing fusion recipes, so nix that comment. But anyway, I meant you're extending your interests to this type of cooking, with a Korean twist.

  • You're even extending your area of interest to a fusion of cuisines. Pretty interesting.

    But what I noticed is that you tend to look at the camera and elsewhere when listening to your guest. Not saying it's rude, and you were probably checking on the cameraman or was nervous, but removes me from the interaction you have with the guest. Just letting you know!
