as a butcher, i must say don't listen to the negative comments here. wood has a natural resistance to bacteria due to it's oils preventing bacteria entering the wood itself. it's also better on the knives. I also must say the guys stuffing sausages are skilled. one guy working the stuffer and the the other guy tying them off takes practice. I would like a recipe or two also lol.

I am sure you have some delicious sausage and I believe you are quite careful. I was just pointing out processing bad habits like the uncovered buckets of meat on the floor. Things can fall into them quite easily. Dust, particles from scrubbing against the wall, hair, etc. Since this is a family video, no harm done, but I myself would not buy any meat products after viewing these things.

sorry. another comment. I love your grinder, but u need a bigger one lol. Then again if u have pretty grand daughters working it all day who cares.

Grinder is a bit small but you may have noticed a new attachment created by my grandfather to expand the space. He took a nonstick pan, carved a hole out of it and bolted it to the grinder. A bit of old-fashioned German ingenuity. Thanks for the comments!

Your using a wood picnic table with cracks in it to season and mix the meat? I hope you clean it with a pressure washer, bacteria can live in the cracks, crevices and the wood grain itself, Yuck!

Table has been used for 90 or so years. It is well maintained and cleaned. Whatever bacteria might be hiding in there has stayed there. We are going on 8 generations of doing this and not a single case of food poisoning. That is a better track record than most commercial meat packers :-) The rest of the processing occurs on stainless steel counter tops and in sanitized buckets.
