It doesnt look like you're tamping very hard in this video (ie 10~15kg of force), yet the extraction is quite good. What's the trick?

In my opinion, so long as tamp, extraction time, grind, temp are kept consistent, you can replicate a good result. I grind finer and tamp with less pressure.
