Try re installing audacity, check to make sure you have a recording device. (install any audio drivers you may need) Set the project sample rate in the lower left hand corner of audacity to something like 44100hz or 48000hz.

Yes, all you need for lets play is copy & paste editing, noise reduction, and possibly eq adjustment. Audacity can do all three of these tasks easily.
