Earthy, slightly sweet, and surprisingly moist and tender, raw butternut squash noodles are the perfect centerpiece in any autumn dish. Butternut squash releases its moisture when it is spiralized or shredded, and it becomes soft and sweet. I think it tastes much better raw than cooked, because when cooked, it can become rather starchy. The wonderful antioxidants, phytonutrients, vitamins, and minerals in the butternut squash are also more abundant if the squash is eaten raw. Butternut squash is incredibly healthy; it is high in fiber, vitamins A and C, potassium, manganese, and carotenoids which help protect against breast cancer, macular degeneration and heart disease.

Butternut squash is delicious served raw, with minimum preparation other than shredding or spiralizing, since this causes the squash to become tender and sweet while retaining its true flavors. When choosing butternut squashes for pasta, look for the smaller butternut squashes. The smaller butternut squashes have more tender flesh, and are easier to spiralize and eat raw. Earthy, fresh, sweet, moist, with a beautiful color, butternut squash pasta is truly becoming one of my new favorites.

  • @PeaceLoveWellness I'm so glad you think it looks tasty! having it with the two sauces my mom and friend garret came up with last night ~ it was seriously one of the best things I've tasted in a LONG time, it was so delish! I had it with the persimmon, red bell pepper and tomato sauce last night, and also with the raw cranberry, celery, apple sauce :) (if you are interested I posted those recipes on my blog!)
