有味冬姑雞飯
2人食
材料
1. 3 杯米
2. 2 x 雞胸肉 ( 洗淨切細粒, 放在有蓋合內, )
3. 加入調味, 1/4 茶匙糖, 1 茶匙盬, 1/2 茶匙酒, 和少許水, 放 20 分鐘在雪櫃 )
4. 12 個中型大冬姑,洗淨後, 放碗內加熱水浸軟後切細粒
5. 1 茶匙薑粒

* 米洗淨後去水, 放入電飯煲
* 炒雞前放 1/2 茶匙豆粉拌混雞粒
* 燒熱pan 放些油, 炒雞粒, 放薑粒, 放冬姑先去水炒幾下, 加入 1 茶匙醬油, 2 荼匙雞精, 1 茶匙盬 見雞熟收火, 加入 1 茶匙魚粉 ( hondashi ) 中國和日本超級市湯都有
* 把pan內的汁水倒入飯煲內, 注意教 3 杯米水線, 不夠要加水, 現在可以煲飯
* 餘卞材料再入pan , 中火煮熱加入 1/2 茶匙醬油, 1/2 茶匙雞精, 見飯起眼把pan 所有柬西放入一齊煲
* 食前雞與飯在煲內拌混,
試味不夠加些醬油或盬

Ingredients
1. 3 cups of rice
2. 2 chicken breasts ( clean up and dry it ) the chicken cut in (dices )
3. after chicken put in a box add 1/4 tea spoon sugar, 1 tea spoon salt, 1/2 tea spoon Rum, some water 20 minutes put in refrigerator
4. 12 x black mushrooms, rinse and soak mushrooms after wash it till soft, cut ends and cut it small (diced )
5. 1 tea spoon choped ginger
6. 1 tea spoon hondashi, japanese fish powder, avaiable in asian super market:

  • You remind me of my mum cooking as she is a great cook too. One query though, she always taught me to put ginger/garlic etc in after the oil is hot so the flavour is imparted to the oil and in turn the oil can impart the flavour to the meat you are cooking. Otherwise once the chicken is seared it is difficult for it to absorb flavours. Just wondered if there was a reason for you to add in the ginger after the chicken. :)

  • Thank you for the recipe , I made it yesterday it tasted wonderful :D I made an alteration instead of adding water in the wok I added the water which the mushroom was soaked in, it added even more flavour that way :D

  • @wantanmien That is the amazing thing about you! My mum mainly sticks to chinese dishes despite us living in europe but you are well versed in the dishes of alot of cultures. I was actually surprised when you put hondashi in, although i know of japanese versions of this dish. I have to say i prefer the chinese versions with lap yuk and/or chinese sausages in it, so warming in winter. But i will probably try yours when i don't have those around.
