Thank you for the recipe , I made it yesterday it tasted wonderful :D I made an alteration instead of adding water in the wok I added the water which the mushroom was soaked in, it added even more flavour that way :D

@wantanmien That is the amazing thing about you! My mum mainly sticks to chinese dishes despite us living in europe but you are well versed in the dishes of alot of cultures. I was actually surprised when you put hondashi in, although i know of japanese versions of this dish. I have to say i prefer the chinese versions with lap yuk and/or chinese sausages in it, so warming in winter. But i will probably try yours when i don't have those around.

You remind me of my mum cooking as she is a great cook too. One query though, she always taught me to put ginger/garlic etc in after the oil is hot so the flavour is imparted to the oil and in turn the oil can impart the flavour to the meat you are cooking. Otherwise once the chicken is seared it is difficult for it to absorb flavours. Just wondered if there was a reason for you to add in the ginger after the chicken. :)
