I love to use olive oil in most of my dishes. The flavor is fantastic and the dietary/health benefits have been documented, however it's far too strong of an oil to be used for baking. It's unique flavor would be overwhelming in brownies.
Oh well, you only used it to grease the bottom of the pan. HAHA!!
