Purple Pickled Eggs and Beets Recipe

Some people let the eggs pickle longer than three days, but I really don't like to do that since there is no sterilization . I prefer that the whole process from pickling to consumption not be more than one week.

You had me at PURPLE! This was just fascinating - right down to you peeling the egg under the running water. I HATE a pickled egg, but now I want one of your beautiful purple eggs. The end salad looked amazing. The only thing that offended me was store bought salad. Even I can wash and dry salad leaves. - roc

@popparoc46 If you had been there, I'd have made the whole salad. But when it's just for me, I hate buying several different greens only to often have them go bad before I finish them all.

How the heck I missed this one I don't know but I would imagine if I enjoyed hard boiled eggs I would definitely try this. : )
