@hodgrix ok remember AB said that butter has a low smoke point which means it melts at a lower temperature. Well if you grease a cake pan with butter, it will melt too soon and the water in the butter will turn into steam. Because it has nowhere to go, it will condense on the bottom of the cake and make it mushy and squishy and un brown. I hope that answers ur question! :D

he said using butter to grease the pans would prevent the cake from browning. ive always thought the opposite, as butter browns, because it has some milk solids. its not a full 20% water. sum1 correct me if im wrong
