Seriously? The water acts as a prism and refracts light just as rainwater does when you see a rainbow in the sky. If you took purified water in a spray bottle when the sun was out, you'd see the same thing! You just never noticed it before. Oddly enough, if there were contaminates in the water, you might not see a rainbow because it could prevent the light from refracting in the water.
We've known about this stuff for a thousand years... get with it!
