When I make toys for children, I prefer a food grade, non-yellowing acrylic finish because kids always put things in their mouth and then the toys need to be washed. The product I LOVE is Benjamin Moore's Benwood Stays Clear polyurethane. It is water clean-up and produces a gorgeous smooth finish.
