@HotVoodooWitch Can't eat wheat, barley and rye, due to a medical condition, and oats are often cross- contaminated, but thank you for your answer:)

a roux is really a basic (french?) cooking technique. i'm not cajun and my father in law taught me how to make a roux to make all kinds of stuff (like macaroni n cheese). i'm real glad to see a real cajun make it though (yaaay youtube). what i really need now is one of those snub nosed spoons

quick question. I don't have a wood stove. If I make this on an electric stove what will be different from yours????????

Love your videos. Do you by any chance know how to make a roux thats not made with wheat, because I can't eat wheat, and I have to use something else.
