The reason the rabbits held upright is so the guts all sit on the lower part of the stomach cavity, its best to have a sharp knife with a good point, make the incision just below the ribcage, run down the stomach pulling towards the outside, avoiding any guts... I've seen many weird ways of gutting rabbits and this is very quick, with no mess. If theres been two of us out lamping, I just zip them open and pass them on to a friend who dumps the guts, we can do big quantities very quickly.

@rackycurva you can go either ways, this way the guts are at the anus, you stop cutting right before the anus so you don't cut them.
