The 27Kg lamb was prepared with a mixture of white wine, rosemary, chilli, rock salt, split pepper.
2 hours before cooking we marinated it with a mixture of butter, extra virgin olive oil, chilli, rosemary, spices, rock salt and split black pepper.
It took approx 4 hours to cook in the wood fired oven.
It was juicy, tender and delicious. Roasted in the wood oven gives the lamb an incredible flavour.
It fed approx 35 people and I used the leftover meat and bones to make a sensational Spaghetti sauce.
