John Mangiapane demonstrates how to make another type of stuffed pasta, this time Cappelletti, a folded, stuffed pasta that is entirely hand made. The tool he uses to cut the squares is called a 'pasta bike.' The video continues in "Making Tortellini With John Mangiapane".

  • John...You are SUCH blessing! My Italian mother-in-law speaks of when she was little girl her grandmother taught her how to make homemade pasta. I've been after her to teach me, she never has (I wonder if it was "I'm the Italian Mama & I will feed my family" job security mindset?) She's 88 now. It's my turn to bring out the "Italian" Mama in this Irish/Polish body! LOL! Thanks for teaching me!!! I am so very grateful to you & will be sure to teach my daughter-in-laws what I've learned :) :)

    Hey John, can you please tell me who makes that pasta bike? And how wide it the pasta machine roller you have? The Atlas 180 is 7" wide. (Thanks!) Janis

  • @candleinthedarkness The pasta bike is made by Marcato (Atlas) and is available on line. WORD TO THE WISE: hold it like I do in the video and it won't pop apart. My Atlas machine rolls a noodle approximately 5 1/2 inches wide, which is a good width for my ravioli plates. If you can get 7" you can set the pasta bike on 2" centers and get three strips (two passes) across. Good Luck! MANGIA !!!
