Ingredients:
3 1/2 cups chicken broth; 1 1/2 cup uncooked rice; 1 can pineapple chunks in juice; 1 cup sugar; 3 tbsp cornstarch; 1/2 tsp ground ginger; 1/3 cup cider vinegar; 2 tbsp soy sauce; 1 red pepper, cut into 1 inch pieces; 1 green pepper cut the same; 1 1/2 lb boneless chicken breast
Heat oven to 350 degrees, spary baking dish with cooking spray. Heat 3 cups of broth to boiling in a saucepan, add rice, reduce heat, cover and simmer about 20 minutes until all liquid is absorbed. Drain pineapple reserving juice, add enough broth to juice to measure 1 1/4 cups. In a saucepan, add pineapple liquid, sugar, cornstarch, ginger, vinegar, and soy sauce; heat to boiling. Cook 2 minutes, stirring constantly. Remove from heat, stir in peppers and pineapple. Cut chicken into strips. Spread rice in bottom of baking dish, arrange chicken over rice. Pour pineapple mix over chicken and rice, cover with foil and bake 45 minutes.
