Kevin the Barista!

My boy Kevin could prepare a better espresso at 13 years old than most baristas in Sydney.

Note all the espressway techniques - wiping out the portafilter basket, only freshly ground beans, collapse the dose, refill, collapse again, sweep, hand tamp, tap the portafilter holder, tamp again.

Kevin then cycles the group head and then times each extraction for an optimum 34* seconds

*34 seconds is the optimum extraction for our "morning blend" extracted on our present ECM Veneziano A3 running at a temperature of 1 bar (+/- 0.1 bar). Other blends use different extraction times.

@jdrazenovich1990 - no mate, the UK is certainly coming of age. they've had more world champions than us now. you obviously know your coffee. my comment was directed at a moron that doesn't know what he is talking about. ah - Esmeralda - I had one only a few days ago through a clover! - superb! :)

he was 13 at the time. you are 22 - you would want to be faster - or you should be sacked. but then, you are in the UK, so you wouldn't know what coffee is supposed to taste like anyway, so it wouldn't matter how fast you made it.

ok the guy who wrote put up this vid is really rude when he is replying to comments! and im from the uk and can tell u that we do make delicious coffee. as for the kid, he does a good job. very impressive for a 13 year old boy. keep it up! x

@sdalcorn DONT YOU HATE THOSE?!?!?! hahaha. seoriusly my rule of thumb is good coffee = slow coffee... i like the fact hes dosing well and grooming well at 14!!! im not sure about the tamping technique but... i was 17 working at a starbucks burning milk and pressing a button for brown water hahaa..so hes already doing better than i was hahaha
