Pretty easy. The azimuth thrusters of that kind (here it is a Rolls Royce system) don't have any reverse mode, they are allways running in one direction, but the thruster is turnable by 360 degree. Therefore there is no need to have a reverse function. But for those, who can't handle the ship with it's realistic propulsion system, VSTEP decided to implement an arcade steering, which allows to use the red (reverse) mode. Guess you have to unable the precison steering before you can use it.

But how can you turn only 1 engine when you are playing with the keyboard??

With precision steering you can set up each engine with any key you want it. So I have three neighbour keys for the turning of each thruster and the numpad for the throttle.
