This carrot cake is unlike any other carrot cake. Our recipe uses no flour—making it gluten free—and the "cake" has a dense, custard-like texture with a pronounced roast carrot flavor that still has a cake-like quality.

The secret to this flavor is the addition of a small amount of baking soda to the carrots during the pressure-roasting step. And the layered cream cheese frosting is soft and far less sweet than most conventional carrot cakes.

Although our recipe is a novel take on carrot cake, it's important to keep in mind that the ubiquitous American carrot cake also started as a novelty dessert. The idea of a sweet, moist, and dense cake laden with chunks of carrots and covered in rich cream cheese frosting reflects the sensibilities of American cooks in the 1970s.
