this cooking technique is actually called "en papillote" not poaching, poaching is when your ingredient is submerged in a stock or any other liquid with a bit of acid and covered. also you would have had a more tender and less dry piece of salmon if parchment paper was used.

Have you tried non-stick Reynolds Wrap? No spray needed, even less fat. I just add 2 Tbl Vermouth.
