Indian preparation with big eggplant(Andhra Style)
Eggplant Tomato curry is a delicious mix of eggplants cooked in a yummy tomato and fresh spices that are blended together until cooked
Eggplant Tomato Curry
1 tsp coriander pdr
1/2 tsp cumin
6 leaf curry leaves
1 number eggplant big
1 tsp ginger garlic paste
1 number gr chilli
1/2 tsp mustard
1 to fry oil
1 number onion big
2 tbsp peanut
2 piece red chilli
1/2 tsp red chilli pdr
1 to taste salt
1 tbsp sesame seeds
2 number Tomato big
1 pinch turmeric
First cut the eggplant and fry in the oil and keep aside.
In a pan add oil, red chilli dry, mustard seeds, cumin seeds, onion chopped, curry leaves, mix well, chopped green chilli, ginger garlic paste, turmeric, mix well for 2 min and then add chopped tomatoes then add coriander powder, chilli powder mix well and cover it with lid and cook for 5mins.
in a pan dry roast peanuts, sesame seeds and blend keep aside.
once the tomatoes are cooked add eggplant mix it,if needed add water cover it with lid and cook for 4 min and then add the powder of peanuts and sesame seeds mix well and switch off the flame.
Lastly top it off with chopped coriander leaves
